Mi Abuelo (Abuelo translate: grandfather) founded the “Spanish Kitchen”, a Mexican food restaurant in 1964. It’s not surprising that the star of his menu was the locally grown Red and Green Chile. Recognizing the emerging popularity of both red and green chile, he decided to sell the restaurant, and in 1974, he and my father set out to provide a consistent and uniform roasted green chile. Now, in tribute to my father and his, I continue with their effort to insure that future generations can enjoy the purity and full flavor only attainable through sustainable farming. Absent of herbicides, pesticides, and synthetic fertilizers, I bring to you- Mi Abuelo Organic Chiles.
I like to think it’s much like the honor befitting to the 2-year-old orphan brought from Mexico to the US territory in 1873, Fabián García, who went on to become the horticulturist now known as the “Father of New Mexican Food” and was responsible for the introduction of the New Mexico #9 which is the ancestor of all NM chiles.
